Garlic, Lime and Ginger Prawns with Noodles

(Serves 1. A tasty, quick recipe, perfect for post race/exercise )




Ingredients:

100g raw prawns (can use frozen)

17g honey 8g wholegrain mustard 1⁄2 tsp fresh finely chopped ginger

1 clove of finely chopped garlic Juice of 1 lime and zest of 1⁄2 lime

Florets of broccoli 1 tsp olive oil Sliced red pepper 1⁄2 finely sliced red chilli

Fresh coriander (optional)



Method

Mix together honey, garlic, ginger, mustard, lime juice and lime zest, then pour over the prawns. Leave for at least 15 minutes.

Steam the broccoli.

Cook the noodles as per instructions on packet.

Fry the chilli and red pepper in the oil for 2 minutes then add the marinated prawns (retain the marinade). Fry the prawns for 2-3 minutes and set aside. Add the remaining marinade, bring to the boil and let it reduce. Mix everything together and serve with boiled rice or egg noodles.

Top with fresh coriander (optional).
